Oven Baked Rosti Cake!

A popular Swiss dish (other than chocolate and fondue of course!) is rosti. This dish is traditionally deep-fried, but I wanted to make a healthier version.  I made this recipe for our Thanksgiving celebration and it was a real hit! It’s very simple to make and can be enjoyed by all.

Ingredients

4-5 rashers of streaky bacon

1 1/2 kg of peeled potatoes

1 small onion

butter for greasing
1. Preheat oven to 190 degrees C.

2. Fry the bacon without oil in a pan until cooked and chop into small pieces.  Set aside.

3. Cut up the potatoes and boil for 5 minutes then drain them.

4. Grate the potatoes into a large bowl (I wanted to do this more efficiently, so I used a food processor with a grating blade).

5. Chop up the onion into small pieces, add the bacon, and stir into the potatoes.

6. Put a baking sheet in the oven to heat up.

7. Grease a cake tin with butter. Pour the potato mixture into the tin.

8. Put dots of butter on the surface of the potatoes.

9. Place in the oven on top of the hot baking sheet.

10. Bake for 1 hour- 1hour and a half depending on how firm the potatoes are and personal preference.

11. Enjoy!

In retrospect, when I made this dish, the potatoes were boiled for quite a bit of time, so it didn’t require as much time in the oven. To see the original recipe, click here.
