Italian Wonderpot Recipe

While in Italy we ate a lot of pasta and decided we wanted to make our own!  I made a one pot pasta meal that was a lot of fun to make and eat.

Here is the really yummy, quick and delicious pasta recipe!

Ingredients:  

  • 350g dried pasta
  • 1 medium brown onion, sliced into segments
  • 3 cups baby spinach leaves (or use frozen spinach)
  • 1 tin (400g) diced tomatoes
  • 1 tbsp Italian herb mix
  • 3 cloves of sliced garlic
  • 5 cups (1.25L) water
  • 2 cubes of vegetable stock
  • 100g grated parmesan cheese
       1) Put the dry pasta into a pot.

2) Cut the onions and garlic and put them in the pot with the pasta.

3) Add the spinach, diced tomatoes, herbs, water and vegetable stock.

4) Cover the pot and turn the stove to high. Bring it to a boil.

5) Once it has started to boil, turn the heat down to medium and wait for 10 minutes or until the pasta has boiled and the liquid has turned into a creamy sauce.

6) Sprinkle the cheese onto your pasta when you are ready to eat.  Mix in the cheese if you would like.

7) Eat and enjoy!
