Blackcurrant Cordial

Have you ever tried Blackcurrant cordial?

I have, and I absolutely love it.  It tastes like sweet berries and a sour lemon mixed together.  We decided to make it because the place we are staying at has a blackcurrant bush so Mikhaila and I went and picked some berries.

While I was making it, there was a sweet smell and it looked dark, dark, dark purple and thick.   While it was on the stove I could hear it bubble.

The recipe is simple, here it is:

-450 g blackcurrants

-250 g caster sugar

-260 ml of water

-One whole lemon

Method

1) Pick and wash the berries.

2) Put the berries, sugar and water in a medium sauce pan and melt the sugar over low heat while stirring occasionally to dissolve the sugar.

3) When the sugar has dissolved and the mixture is thick, bring the syrup to a gentle simmer for five minutes and squeeze the lemon juice and put in the skin and all of the lemon, then simmer for another five minutes

4) Let it cool for ten minutes.

5) Pass the cordial through a sieve (use a potato masher or spoon to smush the skin to get more juice)

6) Pour the mixture into a sterilized bottle. Keep it refrigerated until needed.

If you ever make this, make sure you don’t get mixed up with this and sherry like Anne and Diana did in Anne of Green Gables!

    Sounds delicious Zoe! I love Ribena which is blackcurrant syrup to which you add water and drink. Have you had any orange squash yet? You dilute it with water too. You can buy it without sugar too.

  4. Sounds absolutely wonderful and when I read the word “cordial” I thought the same as you: “Anne of green gables”. We have black currents too, and the syrup (thick and black) is best enjoyed over ice cream 🙂

    Hi Zoe – too sweet to drink undiluted! You have to water it down 1 part cordial to 4 parts water, and it should be delicious! But I agree with your granny – wonderful on ice cream too.

  6. That looks like a lot of fun to make and to eat. Tell your mom, that although drinking it with sherry would be bad, a splash of it in a pint of Guinness is excellent 😉
