Come to Belgium, We Have Chocolate Mousse!

We’ve been on the road for a while so we haven’t had access to a kitchen. While we were in Divonne les Bains it was the perfect time to catch up on our global fieldtrip recipes so we’re back in Belgium.  Belgium has some of the best chocolate in the world, so there is no wonder why this recipe has chocolate in it! We were given this recipe from Ingrid while we stayed in Belgium to enjoy the flower parade.  Ingrid knew this recipe off the top of her head and recited it while my mom wrote it down.  It is very simple and yummy to make.

Ingredients

150g pure dark chocolate

1/8 litre cream (not actually this much; I only put in a splash)

2 egg yolks

2 egg whites

1 tbsp icing sugar

1/4 litre whipped cream

 

1. Break the chocolate into pieces and put in a medium bowl.

2. Melt in the microwave for 3 minutes.

3. Mix in a bit of cream (not all 1/8 litre) to lower the temperature of the chocolate and enhance the flavour.

4. Stir the egg yolks together and mix it into the chocolate.

5. Whip the egg whites with 1/2 tbsp of icing sugar.  Slowly add it to the chocolate and mix.

6. Let the chocolate cool completely.

7. In a separate bowl, beat the whipping cream on medium speed until the cream starts to thicken.  Slowly add 1/2 tbsp of icing sugar and 1 tsp of vanilla and keep mixing.

8. Stir the whipped cream into the chocolate mixture.

9. Put the mousse in jars/bowls in the fridge for about 1 hour.

10. Garnish with a raspberry and a mint leaf (I picked both fresh from the garden in Divonne les Bains).

11. Eat!
