A Fruit and a Root!

For our Cambodian cooking class, I chose mango salad and lotus root with pork. I picked the salad because I love mangoes and I picked lotus root with pork because it was different.  Success! Everything was delicious! Try these recipes to taste for yourself!

For the mango salad:

Ingredients:

Salad

  • 1 green mango, peeled and grated
  • 1 carrot peeled and grated
  • 20 g sweet basil
  • 1 spoon of ground roasted peanuts
  • 3 sprigs of Asian coriander
  • ½ teaspoon of sugar

Dressing Sauce

  • 3 tablespoons of chili coriander dip
  • 2 green onions- chopped
  • ½ sweet chilis- chopped
  • 1 ½ spoon chicken powder
  • 2 cloves of garlic- sliced
  • 1 cilendral root- chopped
  • 1 ladle of cold Water
  • Lemon juice

To make the dressing sauce:

In a bowl, mix all the dressing ingredients together and put aside.

To make the salad:

Process:

1. In a bowl, or on a plate, mix mango, carrot, roasted peanuts, chili coriander dip, basil, chicken powder and 1 green onion.

2. Blanch in boiling water for 3 minutes- add spices etc. to your taste

3. Add dressing sauce

4. Eat and enjoy!

For the lotus root and pork:

Ingredients

  • Thinly sliced lotus roots
  • Thinly sliced pork
  • 3 spring onions cut long
  • 1 spoon of olive oil
  • ½ garlic clove
  • ½ spoon of brown sugar
  • 1 ladle of water
  • 2 spoons of oyster sauce
  • ½ tea spoon of black pepper

Process:

1. In a pan, stir fry olive oil, garlic, brown sugar, pork and lotus root

2. About 1 minute after the lotus root, add water, oyster sauce, black pepper and spring onion.

3. You know what the last step is… Eat!

This food is great!  You really should make these dishes if you would like to eat one of the best meals ever! Stay tuned, because tomorrow is the last part to our Cambodian cooking class!

    All I can say is Yum, Yum, Yum!!!!!! These two dishes certainly look very appetizing. Your directions are very easy to follow. Hopefully I will be able to find Lotus root in the stores! Love, Baba

      If you can’t find the lotus roots, you can always go to Cambodia and make it there! 🙂

  2. Hi, Zoe, these two recipes look really mouth watering, and I think I’ll try to make the salad. Regarding the Lotus root I am like Baba, I wouldn’t know where to get that, so I have to check with “Dr. Google” and see if there is a way to either replace it with something else or where to go in search of it. Love the recipes and your description and photos, and also that they are so easy to make. Gazillion XOXOXO’s
